Ebano stands for “Early Black Aromatic Novelty” and represents a valuable innovation from an environmental, culinary and sensory perspective.
Ebano requires very little energy and agricultural input to grow: less water, less fertiliser and no fungicides. Its significantly later sowing period allows weeds to be controlled effectively through mechanical methods. No other rice currently cultivated can be sown as late as Ebano, at the end of June. This also makes it suitable for organic and sustainable farming with a low environmental impact.
Ebano is ideal for creating delicious risottos and a wide variety of modern recipes. It can also be used in baked goods, finger food, sushi and arancini.
